The Be Well Coach: Thai Quinoa Bowl

quinoaAre you a big fan of Thai food? I love the flavors of Thai and honestly it is pretty easy to make your own recipes at home so this week I am sharing one of my favorite go to recipes when I am need a quick fix of Thai. I use quinoa as the complex carbohydrate in this recipe but you could substitute out soba or rice noodles if you wanted to. This recipes offers lots of healthy vegetables, healthy fats and tons of YUM!

Thai quinoa bowl

• 1/2 cup Broccoli
• 1/4 cup Carrots
• 1 handful Cilantro
• 2 cloves Garlic
• 1 1 inch piece Ginger
• 1/4 cup Green onions
• 1 Lime
• 1/2 Red onion, small
• 1/2 cup cooked Quinoa
• 1 tsp Sesame seeds
• 1 tbsp. Rice vinegar
• 1 tbsp. Sesame oil

Combine all ingredients in a bowl and you can either eat on your own or top on a bed of lettuce.
