Summer is in full blast here in Myrtle Beach and I have been having a great time experimenting with different salad combinations and also making my own salad dressings. Since I am dairy free if I needed to come up an alternative to mayo, sour cream and cheese and my first thought was to use an avocado in their place.
Avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals. What you might not know is that they are actually a fruit, not a vegetable but unlike fruit which are mainly a source of carbohydrates the avocado offers us a great source of healthy fat and they are great source of potassium which is extremely important especially in the heat of the summer.
You can eat avocados raw, you can mash them and make guacamole and you can dice them up and put in your salad or favorite dishes.
Here is a great recipe for a salad dressing that will enhance any meal.
Leslie’s avocado salad dressing
½ Ripe avocado peeled and cubed
2 cloves chopped garlic
½ tsp fresh lemon juice
1 Tbs rice vinegar
1/3 cup of cold pressed olive oil
Salt and pepper to taste
¼ cup of fresh chopped parsley
All ingredients into the blender or food processor and Enjoy!
