I’ve been in Austin, Texas this past weekend participating in a business mastermind where I was working on the vision for Be Well Meals. One morning, three of us decided to take a break to enjoy a bike ride around the city and somehow, I ended up leading the group. Our intended destination was a beautiful bike path that winds around a lake in the middle of the downtown area. As we approached a one way street I didn’t want to ride down it in the wrong direction, so I went left and had a big surprise. Which leads me to wandering around my house. I love this time of year and I always feel renewed when the sun is shining bright. It is a great time to clean out the old stuff laying around your home (especially your refrigerator) and bring new and fresh items into your life.
This week I am sharing a juice combination I had while visiting Austin that will surely awaken your senses and give you tons of energy. I had this combination in juice form but you can certainly put the same ingredients into a blender and enjoy them as a smoothie.
Coco Lilly was the name of the drink and I got it at a very popular juice bar called Juice Land. What a wonderful name, sounds like a place I would like to live!
Ingredients: Coconut Water, cucumber, celery, kale, parsley and spinach.
Now if you are juicing with a juicer you can add these in any combination and any amount you like. If you are doing a smoothie, I would do 2 cups of coconut water and then a mixture of the vegetables that equals 2 cups. I would probably not add the celery since it is stringy and it won’t breakdown well in most blender as will all the other ingredients.
I had a great time visiting all the juice and smoothie bars they have in Austin and came home with some great ideas for the new Café and Juice Bar that I am opening up. Juicing and Smoothies are such a fun and nutritious way to give your body energy and are perfect as the weather gets warmer to stay hydrated.
